Default Safety of older tires?

Ladies and gentlemen, please start a discussion regarding the safety of older tires.

How old is too old?
Why
How can you tell (besides the date stamp)

Off road only, On road only, On road to the trails, run the trails and get home safely. Does it matter

I don't know if there is a true answer to this question. Any tire experts out there?

Taking away the damage factor, I feel a lot depends on how much weather the tire was exposed too. For instance, we've all seen tires that have cracked side walls on an old car or trailer. I would not trust such a tire on the road.

Other than that, I don't know.
