This is an interesting idea. I have wanted to make a simple table/seat setup for when we are out on short trips and want to stop for lunch. The addition of the kitchen that can be removed from the hitch and moved about camp is great. I can picture a simple box with the sink/stove on top and a lid to cover. All other goodies inside accessible through a locking cabinet door.
The weight will add up quick if using the hitch. Do you need to get into the rear when it is connected? Probably not with a van. I am rebuilding my camp trailer and will get some pics of what I did with it when I get a little further along. I found walking around an RV wrecking yard can help with the inspiration.
